Jolly Ginger Rice By CL WEARNE - sauce club member This is based on a one pot african rice dish that is great for using up leftover meat and is also very easy! Quantities make 2 dinners a 2 tupperware packed lunches Garlic Oil 1 pepper, sliced 1 onion, sliced Chilli/s (adjust to your fire tolerance) sliced finely Tbsp tomato sauce 2 tbsp (at least) Chef Bernie’s Ginger Sauce 250ml rice (adjust to  your appetite!) What is Jerk Anyway

Researching the word ‘Jerk’ has been interesting, with different meanings in different countries, it is even used as a boys name in Scandinavia although they do put an ‘h’ behind the ‘J’ (Jherk).  Here in the UK  we would be most offended if some was to call us a ‘jerk’! In the Caribbean the word Jerk is used to describe a cooking method native to Jamaica but used throughout  the islands. The meat is dry rubbed or wet marinated with a hot mix of spice & peppers.
